MaiSazi’s Lonzino is a lean kind of cured meat, obtained from pig’s loin which was deboned, tanned and placed to mature for about 2 month. The unique fragrance is delicate, slightly seasoned with spices and the taste is savoured but not salty. What is peculiar about this kind of lonzino is the mix of flavours that join the typical compactness of lean meats. Its shape is thin and cylindrical and it is wrapped in natural guts. When cutting a slice, you can observe the bright red color and the sparse, white stripes of fat; it is either sold as one piece or sliced and vacuum-sealed.
