Solo Taggiasca farm

Solo Taggiasca is our small farm located in the hinterland of San Bartolomeo al Mare, in the Province of Imperia, precisely in Deglio Faraldi at about 7 km far from the sea and 350 metres above sea level. We only deal with products coming from the fruits of our typical “Taggiasca” olive trees, which we tend directly. We own about 2000 olive trees covering an area of about 7 hectares and our production chain is completely internal. All this allows us to stay at the top for quality in our industry.
Some news to understand who we are and how we work. In summary we can enclose them in 3 fundamental points

Point n ° 1 ‘we are producers’

We only deal with products deriving from the fruit of the olive tree grown directly by us. We do not market products ‘grown’ by others
The cultivation of plants allows the control of all aspects that then allow you to have a final product of excellence. For example fertilization, various pesticide treatments, pruning, the right one

determination of the collection period etc

Point No. 2 ‘totally internal phases of productions’

Our supply chain is completely internal, being equipped with a mill for the production of oil, calibrating and stoning machine for olives in brine, machine for the production of pate, laboratory equipped for the
complete packaging management

Point n ° 3 ‘craft dimension’

Third and last important consideration, we are a small company necessary for one niche production with a high quality control of both production and transformation processes This leads to the final achievement of a product of superior quality to the average. We have 2 permanent employees and 2 fixed-term contract

Our olive oil “Monocultivar Taggiasca”

It is the label of our first-tier olive oil we get from the selection of our best olives, harvested during the most excellent time – between the beginning of November and late December maximum – in our highest-altitude soils, and after a short storage time: less than 24 hours . All this involves the maximum freshness and fragrance with acid values below 0.25 and peroxides of less than 5

Our olives

Our olives – Pitted “Taggiasca” olives in extra pure olive oil and “Taggiasca” olives in brine following the classic Ligurian tradition: only with water, salt and natural flavorings.
“Taggiasca” olives get immersed in saltwater with the addition of aromatic herbs and gradually lose their original bitterness and stabilize their flavor. About six mounths later they are ready to be consumed.
This is our classic “Taggiasca in salamoia”, truly inimitable and unique in the world of table olives, excellent especially for aperitifs and for giving an extra special touch to many dishes and recipes.
