    This product is obtained from black Abruzzo swine cheeks. Anatomical portions of animal muscle are processed and the masseter muscles, i.e. the lean part of the cheek, are separated. The guanciale is then salted, cured and seasoned at controlled temperature and humidity. Its flavor is strong and unmistakable, and it is enriched by spices.
